Veggie Panini Pizza

Yield: 25 pizzas | Serving Size: 1 panini bread, 2 slices cheese, 1/4 cup vegetable blend
Child Nutrition: 2 meat/meat alternate, 1 oz. eq. grain, 1/4 cup vegetable (other) | HACCP Process III.

Ingredients

  • 6 1/4 cups | Frozen roasted pepper and onion blend, thawed
  • 25 each | Panini bread
  • 1 2/3 cups | Low-sodium marinara sauce

Preparation

STEP 1

Sauté pepper and onion blend until vegetables are crisply tender.  Hold warm.

STEP 2

Spread approximately 1 tablespoon marinara sauce over panini bread.

STEP 3

Top with 2 slices of cheese and 1/4 cup vegetable blend.

STEP 4

Sprinkle with Italian seasoning, if desired.

STEP 5

Bake at 400°F until cheese is melted, 4 to 6 minutes.

STEP 6

Hold warm until ready to serve.

CCP: Maintain hot food at 135°F or above
