Preparation
STEP 1
Place carrots, onions and cucumbers each in separate medium container. In large container combine water, vinegar, sugar and salt stirring until completely dissolved. Pour hot liquid evenly over vegetables in each container until covered. Cover and refrigerate at least 1 hour or overnight.

STEP 2
Combine mayonnaise with green onion and cilantro; set aside.

STEP 3
To assemble sandwich place 2 cheese slices on bottom half of hoagie; top with 2.4 ounces turkey and 4 jalapeño slices. Top with 2 tablespoons pickled carrots, 6 slices pickled cucumbers and 1 tablespoon pickled onions. Spread 1 tablespoon mayonnaise mixture on the inside of the top half of hoagie bun. Place on top and secure with toothpick if needed.
STEP 4
Serve immediately.
