Thai Chicken Sandwich with Queso Bravo Cheese Dip

Ingredients

  • 1 pound | Land O Lakes® Queso Bravo® Cheese Dip with Jalapeños, White
  • 6 ounces | Land O Lakes® Shredded Mozzarella Cheese
  • 3 tablespoons | Hot water
  • 2 tablespoons | Thai red curry paste
  • 10 (4-ounce) | Boneless skinless chicken breast, cooked, thinly sliced
  • 5 ounces | Red bell pepper, julienne, lightly sautéed
  • 5 ounces | Green bell pepper, julienne, lightly sautéed
  • 10 ounces | Red onions, julienne, lightly sautéed
  • 4 ounces | Salted peanuts, chopped
  • 4 ounces | Green onions, chopped
  • 5 ounces | Shredded carrots
  • 1/2 cup | Fresh cilantro, chopped

Preparation

STEP 1

Heat Queso Bravo Cheese Dip according to pouch directions.

STEP 2

Combine cheese dip, Mozzarella and hot water in small stockpot; whisk until well combined and smooth. Stir in curry paste; heat to 165°F. Hold warm until service.

STEP 3

To build sandwich, layer 4 ounces chicken breast, 2 ounces sautéed vegetables and 2 ounces cheese sauce on hoagie bun.

STEP 4

Top with peanuts, green onions, carrots and cilantro. Serve with additional sauce, if desired.
