Thai Chicken Sandwich with Queso Bravo Cheese Dip

Ingredients

  • 1 pound | Land O Lakes® Queso Bravo® Cheese Dip with Jalapeños, White
  • 6 ounces | Land O Lakes® Shredded Mozzarella Cheese
  • 3 tablespoons | Hot water
  • 2 tablespoons | Thai red curry paste
  • 10 (4 ounce) each | Boneless, skinless chicken breast, cooked, thinly sliced
  • 5 ounces | Red peppers, julienne, lightly sautéed
  • 5 ounces | Green peppers, julienne, lightly sautéed
  • 10 ounces | Red onion, julienne, lightly sautéed
  • 4 ounces | Salted peanuts, chopped
  • 4 ounces | Green onion, chopped
  • 5 ounces | Carrots, shredded
  • 1/2 cup | Cilantro, chopped

Preparation

STEP 1

Heat Queso Bravo Cheese Dip via one of the methods on the pouch.  Hold warm.

STEP 2

In small stockpot, combine cheese dip, Mozzarella and hot water.  Whisk until well combined and smooth.  Stir in curry paste and heat to 165°F.

STEP 3

To assemble, layer 4 ounces chicken breast, 2 ounces sautéed vegetables and 2 ounces cheese sauce on hoagie bun.

STEP 4

Top with peanuts, green onion, carrots and cilantro.  Serve with additional sauce, if desired.
