Spray two full hotel pans with release spray or line with parchment paper.
Place bottom halves of buns in prepared pans (24 per pan). Top each with 1 Cracker Cut.
Unfold egg squares and lay over 2 bottom buns. Continue covering 2 bottom buns with egg rectangles until all are covered. You will use 12 egg rectangles per hotel pan.
Top each egg half with 1 Cracker Cut and 2 slices jalapeño. Cover with top halves of buns.
Cover with parchment paper and tightly seal pans with foil.
Bake sandwiches at 350°F until cheese is melted and sandwich is heated to 165°F for 15 seconds.
CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above
Cut into individual sandwiches for easier service, plating 2 sandwiches per serving.
