Southwestern Chicken Sandwich

Child Nutrition: 2 1/2 meat/meat alternate, 2 oz. eq. grain, 1/4 cup vegetable (other) | HACCP Process III.

Ingredients

  • 100 slices (8 1/2 pounds) | Tomato slices
  • 5 pounds | Lettuce leaves
  • Optional | Avocado slices
  • Optional | Light sour cream

Preparation

STEP 1

In large stockpot or kettle, combine chicken, cheese sauce, barbecue sauce and chiles. 

CCP: Heat to 165°F for at least 15 seconds

STEP 2

During service, scoop 1/2 cup chicken mixture onto Kaiser bun with garnish onside. 

CCP: Maintain hot food at 135°F or above

STEP 3

May serve with optional toppings.
