Preparation
STEP 1
In large bowl combine dressing ingredients. Portion 1 ounce into 24 1-ounce containers, cover with flat lid. Set aside.
CCP: Maintain cold food at 41°F or below
STEP 2
In medium bowl toss chicken with sodium-free Mexican seasoning. Set aside.

STEP 3
In 16-ounce clear container, layer shaker salad ingredients in this order:
Lettuce, 1/4 cup
Black beans, 1/4 cup
Tomatoes, 1/4 cup
Green pepper, 1/4 cup
Pinto beans, 1/4 cup
Cheddar cheese, 1 ounce
Seasoned chicken, 1 ounce
Cover with flat lid
STEP 4
Place dressing cup upside down inside domed lid. Surround dressing cup with 1 tablespoon tortilla strips, breaking if necessary to make them fit. Attach dome to covered salad container.
STEP 5
Refrigerate until ready to serve.
