Roasted Beets with Herbed Goat Cheese recipe

Ingredients

  • Roasted Beets
  • 1 pound | Fresh beets
  • 2 tablespoons | Olive oil
  • As desired | Salt
  • As desired | Pepper
  •  
  • Herbed Goat Cheese Sauce
  • 4 1/2 ounces (1/2 cup) | Land O Lakes® Extra Melt® White Cheese Sauce
  • 1 1/3 ounces (2 tablespoons) | Goat cheese, crumbled
  • 1 ounce (2 tablespoons) | Hot water
  • 1 tablespoon | Shallot, minced
  • 2 teaspoons | Minced dill weed
  • 2 teaspoons | Minced fresh parsley
  • 1 teaspoon | Lemon juice
  • 1 teaspoon | Olive oil

Preparation

STEP 1

Cut off and discard top and root ends of beets. Peel beets; cut into 1 1/2-inch wedges. Toss beets with 2 tablespoons olive oil; season with salt and pepper, as desired. Place beets onto sheet tray; roast in 400°F oven 35-40 minutes or until tender.

STEP 2

Heat Extra Melt® Cheese Sauce according to manufacturer's instruction.

STEP 3

Combine hot cheese sauce and all remaining cheese sauce ingredients. Drizzle sauce over roasted beet wedges to serve.
