Cut off and discard top and root ends of beets. Peel beets; cut into 1 1/2-inch wedges. Toss beets with 2 tablespoons olive oil; season with salt and pepper, as desired. Place beets onto sheet tray; roast in 400°F oven 35-40 minutes or until tender.
Heat Extra Melt® Cheese Sauce according to manufacturer's instruction.
Combine hot cheese sauce and all remaining cheese sauce ingredients. Drizzle sauce over roasted beet wedges to serve.
