To build a quesadilla, top a flour tortilla with about 1/4 cup of Extra Melt Cheese, 1/4 cup chicken, 1 tablespoon pineapple, 1 tablespoon green onion, 1 teaspoon cilantro, 2 teaspoons sweet chili sauce, another 1/4 cup cheese and top with a second tortilla.
When ready to cook, heat a griddle to medium (350°F). Melt a thin layer of Clarified Butter over the cooking surface. Place quesadilla(s) on the griddle. Cook until golden brown on one side; flip and continue cooking until browned and cheese is melted.
