Quesadillas with Extra Melt Shredded American Cheese, Pineapple, and Chicken




To build a quesadilla, top a flour tortilla with about 1/4 cup of Extra Melt Cheese, 1/4 cup chicken, 1 tablespoon pineapple, 1 tablespoon green onion, 1 teaspoon cilantro, 2 teaspoons sweet chili sauce, another 1/4 cup cheese and top with a second tortilla.


When ready to cook, heat a griddle to medium (350°F).  Melt a thin layer of Clarified Butter over the cooking surface.  Place quesadilla(s) on the griddle.  Cook until golden brown on one side; flip and continue cooking until browned and cheese is melted.

Tips:  Quesadilla can be assembled ahead of time and cooked to order at the table, assembled and cooked at the table, or assembled and cooked ahead of time (keep warm in a chafing dish).  Cooking ahead should only be done if it is not possible to cook at the booth or table.  Sauce could be served on the side instead of drizzling the quesadilla.
