Heat potato rounds according to manufacturer's instruction. Hold warm until service.
CCP: Maintain hot food at 140°F or above
Combine all ingredients except potato rounds and Shredded Mozzarella Cheese in hotel pan; cover.
Heat sauce mixture to 165°F for 15 seconds.
CCP: Heat to 165°F for at least 15 seconds
When ready for service, ladle 2 ounces cheese sauce over 1 cup potato rounds; top with 1/2 ounce mozzarella.
Serve with whole grain roll and a side salad for a reimbursable meal. Try over rice or nachos instead of potatoes for fun recipe variety.
