CCP: Maintain hot food at 140°F or above
Combine all ingredients except potato rounds and shredded cheese in hotel pan. Cover.
Heat sauce mixture to 165°F for 15 seconds.
CCP: Heat to 165°F for at least 15 seconds
When ready for service, ladle about 2 ounces sauce over 1 cup potato rounds; top with 1/2 ounce shredded cheese.
Acidity in marinara can vary and may affect stability of the sauce recipe. If your sauce breaks, reduce the amount of marinara from 3 cups to 2 cups combined with 1 pouch of cheese sauce. Note that this will impact nutrition.
