Mucho Queso Burrito Kit with Mucho Queso Jalapeño Cheese Sauce

Burrito Kit recipe

Ingredients

  • 7 pounds 14 ounces | Frozen fully cooked taco-seasoned beef crumbles, thawed
  • 50 ounces (2 quarts) | Canned roasted corn, drained
  • 48 ounces (2 quarts) | Canned black beans, rinsed, drained

Preparation

STEP 1

Cold Kit Preparation:

  1. Hold thawed beef crumbles in refrigerator until ready to prepare kits.
  2. Combine corn, black beans and onions in large bowl; hold refrigerated until ready to assemble kits.

To prepare kit for cold service to be heated at home

Portion the following into separate compartments of a bento box or portion into soufflé cups:

  • 1.8 ounces (#10 scoop) beef crumbles
  • 1.5 ounces (#24 scoop) Mucho Queso Jalapeño Cheese Sauce
  • 1.5 ounces (#16 scoop) vegetable mixture
  • 1 (10-inch) tortilla

Cover kit with lid. Refrigerate immediately.

Send kit home with instructions to consume within 24 hours of taking home and on how to store, heat and assemble burrito.

Kit can be held refrigerated up to 2 days before distribution.

STEP 2

Hot Preparation:

  1. Heat beef crumbles according to package directions. Hold warm until ready to assemble burritos.
  2. Combine corn, black beans and onions in large bowl; hold refrigerated until ready to assemble burritos.

To build each burrito:

  • Lay tortilla flat.
  • Spread 1.5 ounces (#24 scoop) cheese sauce onto each tortilla.
  • Top with 1.5 ounces (1/4 cup or #16 scoop) vegetable mixture.
  • Add 1.8 ounces (1/2 cup or #10 scoop) beef crumbles.
  • Roll burrito-style; wrap in deli foil. Hold warm until service.

Tip #1

Land O Lakes® Mucho Queso Jalapeño Cheese Sauce Dip Cups can be substituted for the bulk sauce.

Tip #2

Add additional 1/4 cup vegetable to kit (optional: shredded lettuce and tomato) to reach 1/2 cup vegetable. Or offer carrots and celery as dippers for any extra cheese sauce.
