Mini Meatball Pizza Kit recipe

Ingredients

  • 160 (0.6-ounce) each (6 1/2 pounds) | Mini turkey meatballs
  • 160 (1-ounce) each | Mini flatbread rounds
  • 80 (2.5-ounce) each | Marinara sauce dip cups

Preparation

STEP 1

Prepare meatballs according to manufacturer's instruction. After proper heating, chill rapidly according to HACCP instruction.

Chill ready to eat food from 70°F to 41°F within 4 hours

STEP 2

Cut chilled meatballs in half; store cold until ready to portion for pizza kits.

CCP: Maintain cold food at 41°F or below

STEP 3

Portion ingredients separately into desired container:

2 mini flatbread rounds
1 marinara dip cup (or portion 2.5 ounces marinara sauce into soufflé cup with lid)
1 ounce Shredded Mozzarella Cheese
1/2 cup bell pepper and onion blend
4 mini meatball halves

CCP: Maintain cold food at 41°F or below

STEP 4

Cover pizza kit. Refrigerate immediately. Serve or consume within three days of preparation.
