Mediterranean Farro Bowl Recipe

Ingredients

  • Farro
  • 24 ounces (3 cups) | Hot water
  • 1 pound (2 cups) | Uncooked farro, rinsed
  •  
  • Kale
  • 3 ounces (3 cups) | Chopped kale
  • 1 1/2 ounces (3 tablespoons) | Lemon juice
  • Dash | Salt
  •  
  • Dressing
  • 1 pound | Land O Lakes® Extra Melt® White Cheese Sauce
  • 4 ounces (1/2 cup) | Water
  • 1 teaspoon | Dried dill
  • 1/2 teaspoon | Garlic powder
  •  
  • Toppings
  • 6 ounces (1 1/2 cups) | Diced cucumber
  • 6 ounces (1 1/2 cups) | Diced tomatoes *
  • 3 ounces (3/4 cup) | Diced red onion
  • 2 ounces (1/2 cup) | Sliced pitted Kalamata olives
  • 2 ounces (1/2 cup) | Sliced pepperoncini or banana peppers
  • 1 pound 8 ounces (3 cups) | Cooked protein of choice, such as diced chicken or salmon, shrimp or garbanzo beans
*Substitute diced roasted red peppers.

Preparation

STEP 1

Combine hot water and farro in hotel pan; cook uncovered on full steam in combi oven 25 minutes. Fluff with fork; hold warm for service.

STEP 2

Mix kale, lemon juice and salt in large bowl. Chill 1 hour before service.

STEP 3

Combine Extra Melt White Cheese Sauce, water, dill and garlic powder in hotel pan. Cook on full steam in combi oven until mixture reaches 165°F. Chill for service.

STEP 4

To assemble: Place 1/2 cup farro in bowl. Arrange kale and other vegetable toppings separately around edge of bowl. Place protein in center of bowl. Drizzle with about 1 1/2 ounces dressing.
