In large bowl, mix paprika, cumin, rubbed sage, garlic powder, chili powder, vinegar, Tabasco and soy sauce until well combined.
In medium bowl, whisk together tomato paste and Butter Sauce Base.
Slowly add Butter Sauce Base mixture to the seasonings, stirring constantly. Heat to 165°F for 15 seconds. Serve or chill.
Heat Queso Bravo Cheese Dip to 165°F for 15 seconds and keep warm.
To assemble, mix brisket with sauce and keep warm. Place 6 ounces fries on each plate and top with 4 ounces of sauced beef. Top with caramelized onions, chopped jalapeños and cheese sauce. If desired, top with pickled red onion, cilantro, green onion and radishes.
