Preparation
STEP 1
Combine Ultimate White Cheese Sauce, chiles and jalapeño in half steam table pan. Cover.
STEP 2
Heat on full steam until product reaches 165°F for 15 seconds. Hold warm.
CCP: Heat to 165°F for at least 15 seconds
STEP 3
Hold prepared shredded chicken warm until ready for service.
CCP: Maintain hot food at 135°F or above
STEP 4
Hold prepared tator tots warm until ready for service.
CCP: Maintain hot food at 135°F or above
STEP 5
For service, top 1 cup tater tots (4.5 ounces) with 2 ounces shredded chicken and 2.5 ounces queso.
STEP 6
Garnish with prepared pico de gallo or sliced scallions, if desired.
