Preparation
STEP 1
Combine Ultimate White Cheese Sauce, chiles and jalapeños in half steam table pan; cover.
STEP 2
Heat on full steam until product reaches 165°F for 15 seconds. Hold hot until service.
CCP: Heat to 165°F for at least 15 seconds
STEP 3
Hold chicken warm until service.
CCP: Maintain hot food at 135°F or above
STEP 4
Hold tator tots warm until service.
CCP: Maintain hot food at 135°F or above
STEP 5
To serve, top 1 cup (4.5 ounces) tater tots with 2 ounces shredded chicken and 2.6 ounces queso.
STEP 6
Garnish with pico de gallo and/or sliced scallions as desired.
