Korean Inspired Beef Totchos with Ultimate White Cheese Sauce

Yield: 68 servings | Serving Size: 1 cup tator tots, 1.8 ounces beef mixture, 2 ounce ladle cheese sauce

Ingredients

  • Korean Beef Ingredients
  • 4 cups | Low sodium teriyaki sauce
  • 1/3 cup | Sriracha sauce
  • 5 pounds | Frozen precooked beef crumbles
  • 19 pounds | Prepared tater tots

Preparation

STEP 1

Combine all cheese sauce ingredients in steam table pan.  Cover.  Heat on full steam until sauce reaches 165°f for at least 15 seconds.

CCP: Heat to 165°F for at least 15 seconds

STEP 2

Mix teriyaki sauce with Sriracha in steam table pan.  Add frozen beef crumbles to sauce and stir to combine.

STEP 3

Cover and heat onf ull steam until product reaches 165°F for 15 seconds.

STEP 4

To serve, place 1 cup tater tots into serving dish.  Top with two heaping #30 scoops seasoned beef and one 2-ounce ladle cheese sauce.
