Kicked-Up Queso with Jalapeños, Red Pepper and Ultimate Cheddar™ Cheese Sauce

Ingredients

  • 1 1/2 tablespoons | Crushed red pepper flakes
  • 1 1/2 tablespoons | Hot pepper sauce
  • 1 tablespoon | Granulated sugar*, optional

Preparation

STEP 1

Combine all ingredients in half steam table pan.

STEP 2

Cover.  Heat on full steam, about 40 minutes, until temperature reaches 165°F for 15 seconds.

CCP:  Heat to 165°F for at least 15 seconds
CCP:  Maintain hot food at 135°F or above

Tip:  Serve as dip for nachos or bread sticks. Serve as a sauce over BBQ sandwiches, smother burritos, top tacos or create a macaroni and cheese with a kick!

*Addition of sugar helps to add “sweet dairy” notes.
