Heat oven to 400°F.
Portion ground beef into 8 (2-ounce) balls. Cut each ball in half; press each half into 3x1/4-inch circle. Place scant tablespoon Extra Melt Shredded American Cheese in center of 8 circles; gently fold untopped circle over cheese-covered circle. Crimp edges together. Gently press down center to form uniform patties.
Heat oil in large ovenproof sauté pan over high heat. Carefully place patties into pan; cook without turning until seared. Flip each patty; transfer pan to oven. Bake 7 minutes or until internal temperature of patties reaches 165°F.
Place 1 patty on bottom half of each bun; top evenly with Extra Melt Cheese, ketchup, mustard, tomato, pickle and lettuce. Cover with top halves of buns. Stab skewers through each burger; use to garnish Bloody Mary.
