Huevos Rancheros Breakfast Bowl with Queso Bravo Cheese Dip

Yield: 125 ounces | Serving Size: 1 cup rice mixture

Ingredients

  • 1/4 cup | Land O Lakes® Butter
  • 2 1/2 cups | Onion, chopped
  • 5 cups | Red and green bell peppers, chopped
  • 2 1/2 cups | Black beans, rinsed, drained
  • 7 1/2 cups | Cooked brown rice

Preparation

STEP 1

Sauté onions and peppers in butter until softened.  Combine cooked onions and peppers, black beans, brown rice and Queso Bravo Cheese Dip; heat to 165°F.

STEP 2

To serve, portion 1 cup rice mixture into serving bowl.  Top with one egg.  Drizzle with 1 tablepoon enchilda sauce and sprinkle with cilantro and salt and pepper.
