Hearty Cowboy Caviar

Ingredients

  • 1 (#10) can (17 1/2 cups) | Pinto beans, rinsed, drained
  • 1 (#10) can (17 1/2 cups) | Black beans, rinsed, drained
  • 8 ounces | Onion, finely chopped
  • 102 ounces | Frozen corn, thawed
*Do not substitute canned jalapeños as they are too acidic and will cause sauce to curdle.

Preparation

STEP 1

In large bowl, add chipotles and jalapeños to Ultimate White Cheese Sauce.  Stir to combine flavors.

STEP 2

In large stock pot or kettle, combine remaining ingredients to sauce mixture.

STEP 3

Heat over medium heat until hot and heated through.

CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 135°F or above
