Hawaiian BBQ Nachos recipe

Ingredients

  • 10 ounces | Pineapple tidbits, drained
  • 30 ounces (5 cups) | Onions, diced
  • 20 ounces (5 cups) | Green bell peppers, diced
  • 10 ounces (1 1/4 cups) | Lime juice
  • 110 ounces (6 pounds 14 ounces) | Grilled chicken strips*

Preparation

STEP 1

Place drained pineapple onto parchment-lined sheet tray; bake in 375°F oven 10-15 minutes. Let pineapple cool.

STEP 2

To make pico de gallo, combine onions, bell peppers, roasted pineapple and lime juice in large bowl. Cover. Refrigerate until service.

CCP: Maintain cold food at 41°F or below

STEP 3

Combine chicken, barbecue sauce and teriyaki sauce in hotel pan. Cover.

STEP 4

Heat until internal temperature reaches 165°F. Hold warm until service.

CCP: Heat to 140°F for at least 15 seconds
CCP: Heat to 165°F for at least 15 seconds

STEP 5

Heat Ultimate Creamy White™ Cheese Sauce using desired method; hold warm until ready to build nachos.

CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above

STEP 6

To build nachos:

Place 2 ounces tortilla chips into serving container.
Using #10 scoop, top chips with chicken.
Using 1-ounce ladle, top chicken with Ultimate Creamy White™ Cheese Sauce.
Using 2-ounce (1/4 cup) spoodle with holes, top nachos with Pineapple Pico de Gallo.
