Preparation
STEP 1
Hot Preparation: Spray two full hotel pans with release spray or line with parchment paper.
Place bottom halves of buns in prepared pans (24 per pan). Spread about 1 teaspoon mustard over bottom half of each bun.
Top each with 1 Cracker Cut, 2 slices turkey ham and 1 more Cracker Cut, centered over bun. Cover with top halves of buns.
Cover with parchment paper and tightly seal pans with foil.
Bake sandwiches at 350°F until cheese is melted and sandwich is heated to 165°F for 15 seconds.
CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above
STEP 2
Cold Preparation: Place bottom halves of buns on clean work surface. Spread about 1 teaspoon mustard over bottom half of each bun.
Top each with 1 Cracker Cut, 2 slices turkey ham and 1 more Cracker Cut, centered over bun. Cover with top halves of buns. Refrigerate immediately.
CCP: Maintain cold food at 41°F or below
Chill ready to eat food from 70°F to 41°F within 4 hours

Tip #1
Add a few pickle slices to each sandwich along with lettuce leaves and thinly sliced tomatoes. Nutrition should be re-run when any new ingredients are added.
