Preparation
STEP 1
In large bowl gently combine shredded cheeses.
STEP 2
Lay out sourdough breads slices, brush both sides with oil.
STEP 3
Place 12 bread slices "bottoms" on sheet pan, oiled side down.
STEP 4
Place 2 slices of Pepper Jack cheese on each side of bottom bread.
STEP 5
Place 4 slices of jalapeño on top of each cheese portion.
STEP 6
Using #20 scoop, carefully place shredded cheese mixture on top of jalapeños. Divide any remaining cheese among the portions.
STEP 7
Place top bread layer on sandwich, oiled side up.
STEP 8
Set Combi oven to 375F and 100% steam. Bake sandwiches uncovered for approx. 10 minutes, or until bread is toasted and cheese is melted.
STEP 9
Hold warm until service.
