Heat cheese sauce via one of the methods located on pouch.
In medium saucepan, combine cheese sauce and 2 ounces Cojita. Heat to 165°F, stirring occasionally, the Cotija might not fully melt. Hold warm.
For each serving: combine 6 ounces corn, 4 ounces cheese sauce and 1/2 cup (2 ounces) Extra Melt shreds in small mixing bowl. Transfer to heatproof serving dish. Top with 1 ounce cheese shreds and 1 tablespoon Cotija.
Heat under broiler until cheese is melted and golden brown. Sprinkle with Tajin seasoning, if desired.
Serve with tortilla chips.
