Heat Extra Melt® Cheese Sauce according to manufacturer's instruction.
Combine warm cheese sauce and 2 ounces Cotija cheese in medium saucepan. Heat to 165°F, stirring occasionally. (The Cotija may not fully melt.) Hold warm until service.
For each serving: combine 6 ounces corn, 4 ounces cheese sauce and 2 ounces Extra Melt® Shreds in small bowl. Transfer to heatproof serving dish. Top with 1 ounce cheese shreds and 1 tablespoon Cotija cheese.
Broil until cheese is melted and golden brown.
Sprinkle with Tajin seasoning, if desired.
Serve this creamy dip with tortilla chips.
