Creamy Chicken Wild Rice Soup

Ingredients

  • 3 cups | White rice, cooked
  • 3 1/4 cups | Wild rice, cooked
  • 8 ounces | Carrots, chopped
  • 8 ounces | Celery, chopped
  • 6 ounces | Onion, chopped

Preparation

STEP 1

Spray nonstick cooking spray in large heavy saucepan over medium heat; add carrots, celery and onions, heat until soft.  Add mushrooms, stir to continue.

STEP 2

Stir in remaining ingredients.  Cook over low heat, stirring occasionally, until heated through.  Add more pepper to taste, if desired.

STEP 3

Stir in remaining ingredients. Cook over low heat until heated through. Heat to 165°F for 15 seconds. Add more pepper to taste, if desired. 

CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 135°F or above
