Preparation
STEP 1
Combine all ingredients except biscuits in full steam table pan; cover.
STEP 2
Heat on full steam until mixture reaches 165°F for 15 seconds.
CCP: Heat to 165°F for at least 15 seconds
STEP 3
Hold warm until service.
CCP: Maintain hot food at 140°F or above
STEP 4
To serve, place one 3-ounce ladle gravy over one 2-ounce biscuit (or two 1-ounce biscuits).
STEP 5
Serve immediately after topping biscuits.
Recipe Tips
Tip #1
Country Queso (no mushrooms): Combine 32 ounces Land O'Lakes® Ultimate White Cheese Sauce, 1 pound 4 ounces turkey sausage crumbles, cooked and drained, 1 teaspoon ground sage and 1/4 teaspoon cayenne in steam table pan. Cover. Heat until sauce reaches 165°F for 15 seconds. Serve one #10 scoop over desired biscuit or with bagel chips.
Tip #2
This recipe can be pre-portioned and then frozen or refrigerated for heat-at-home service. Once refrigerated, recipe must be consumed within three days. Recipe must be heated to 165°F before consumption.
