Chilled Mediterranean Pasta Salad recipe

Ingredients

  • 4 pounds (14 cups) | Dry elbow macaroni
  • 1 (106-ounce) pouch | Land O Lakes® Ultimate White Cheese Sauce
  • 1 pound 14 ounces (6 cups) | Frozen fully cooked diced chicken, thawed
  • 9 ounces (2 cups) | Diced green bell peppers
  • 9 ounces (2 cups) | Diced yellow bell peppers
  • 12 ounces (2 cups) | Diced red onions
  • 2 tablespoons | Low-sodium Mediterranean seasoning
  • 1/2 teaspoon | Garlic powder
  • 1/2 teaspoon | Cayenne

Preparation

STEP 1

Cook macaroni until al dente; drain. Cool completely.

STEP 2

Combine macaroni and all remaining ingredients in large bowl; mix well. Cover; refrigerate immediately.

CCP: Maintain cold food at 41°F or below
Chill ready to eat food from 70°F to 41°F within 4 hours


Recipe Tips

Tip #1

Whole grains absorb more liquid and can make this pasta salad thicker. If using whole-grain pasta, increase water as needed.
