Chicken Wrap with RS Process American Slices

Ingredients

  • 1 cup | Fresh tomatoes, seeded, diced
  • 1/2 cup | Frozen whole kernel corn, thawed
  • 1/4 cup | Onion, diced
  • 1/4 cup | Fresh cilantro, chopped
  • 2 tablespoons | Fresh lime juice
  • 1/4 cup | Light mayonnaise
  • 1 each | Ripe avocado
  • 4 (10-inch) each | Whole wheat flour tortillas, warmed
  • 4 each | Lettuce leaves
  • 8 ounces | Chicken breast, roasted, shredded
  • 8 slices | LAND O LAKES® 25% Reduced Sodium American Cheese , *cut in half

Preparation

STEP 1

Combine tomatoes, corn, onion, cilantro and lime juice in medium bowl. Set aside.

STEP 2

Mash avocado and combine with the light mayonnaise. Spread one side of each tortilla with 3 tablespoons of the mixture. Top with lettuce leaves.

STEP 3

Roast chicken breast without salt, cool, shred.

STEP 4

To finish each wrap, layer one half of tortilla with 2 half slices of cheese, 2 ounces chicken, 1/3 cup salsa mixture, and 2 half slices of cheese. Roll up, burrito style. Wrap each sandwich tightly in plastic wrap until service.
