Heat Queso Bravo Cheese Dip via one of the methods on the pouch.
In a medium stockpot, whisk together cheese dip, BBQ sauce and chipotle purée. Heat to 165°F. Hold warm.
Combine dry seasonings in small bowl.
Season both sides of chicken breasts with seasoning mixture.
Heat Clarified Butter on flattop griddle (or divide and cook in smaller batches in sauté pans). Add seasoned chicken breasts and brown on both sides.
Place chicken on sheet pan in 350°F conventional oven for 10 minutes, until chicken has internal temperature of 165°F.
Remove chicken from oven and thinly slice. Hold warm.
To assemble wrap, lay 2 pieces of Monterey Jack cheese across the lower third of tortilla. Top with 3 ounces sliced chicken, 2 ounces pepper and onions. Wrap tortilla "burrito" style.
Brown the outsides of wraps on griddle, if desired.
Serve wrap with 4 ounces warm chipotle BBQ cheese sauce on side.
