Heat Queso Bravo Cheese Dip according to pouch directions.
Combine warm cheese dip, BBQ sauce and chipotle purée in medium stockpot. Heat to 165°F. Hold warm until service.
Combine dry seasonings in small bowl.
Season both sides of chicken breasts with seasoning mixture.
Heat Clarified Butter on flattop griddle (or divide and cook in smaller batches in sauté pans). Add seasoned chicken breasts; brown on both sides.
Place chicken on sheet pan; bake in 350°F conventional oven 10 minutes or until internal temperature of chicken reaches 165°F.
Remove chicken from oven; thinly slice. Hold warm until service.
To build wrap, lay 2 pieces Monterey Jack cheese across lower third of tortilla. Top with 3 ounces sliced chicken and 2 ounces sautéed onions and bell peppers. Wrap tortilla up burrito-style.
Brown outsides of wraps on griddle, if desired.
Serve wrap with 4 ounces warm chipotle BBQ cheese sauce on side.
