Preparation
STEP 1
Combine all ingredients in large bowl.
STEP 2
Refrigerate immediately until ready for assembly.
STEP 3
For assembly:
Lay out tortillas.
Portion 4.5 ounces (#8 scoop) onto each tortilla.
Wrap burrito-style, then wrap in deli foil.
STEP 4
Refrigerate immediately. Best if consumed within 24 hours of assembly.
STEP 5
Store refrigerated up to 2 days. If heating is desired, heat in foil until temperature reaches 165°F.

Recipe Tips
Tip #1
If holding refrigerated for two days, consider adding a layer of lettuce leaves to tortilla before adding chilled chicken queso. This gives an added crunch as well as a barrier to keep the tortilla from getting moist. Lettuce can also serve as an additional 1/4 cup veg to raise the CN to 1/2 cup per serving.
