Prepare mashed potatoes according to package directions and hold at 140°F or above.
Heat Ultimate White Cheese Sauce according to package directions and hold at 145°F or above.
Place chicken on sheet pan and bake in 325°F oven until internal temperature reaches 165°F.
Steam corn until internal temperature reaches 150°F.
On student tray or in bowl, use #16 portion scoop and place 1/4 cup mashed potatoes. On top of mashed potatoes, portion 2 ounces of breaded chicken, with 1/2 cup corn on top of chicken. Ladle 2 ounces of Ultimate White Cheese Sauce over top. Sprinkle with 1/2 ounce (2 tablespoons) Cheddar cheese. Serve.
