Chef Jason Inspired CubanMac Sandwich with Prepared Macaroni and Cheese

Yield: 26 hoagies | Serving Size: 1 whole grain bun, 3 slices turkey ham, 3 ounces Macaroni and Cheese

Ingredients

  • 1 teaspoon | Ground mustard
  • 1 teaspoon | White pepper
  • 78 (.5 ounce) slices (2 pounds 6 ounces) | Turkey ham
  • 1/4 cup plus 1 teaspoon | Pickles, diced
  • 26 each | Whole grain hot dog buns, toasted

Preparation

STEP 1

In half steam table pan, combine Macaroni and Cheese with all ingredients except ham, pickles and buns.

STEP 2

Cover and heat until mixture reaches 165°F for at least 15 seconds.

STEP 3

To assemble, place 3 slices turkey ham on toasted bun, top with 3 ounces macaroni and cheese and 1/4 teaspoon diced pickles.

CCP: Heat to 165°F for at least 15 seconds
