Chef Inspired Chicken Shawarma with Ultimate White Cheese Sauce

Ingredients

  • Shawarma Ingredients
  • 3 pounds | Frozen diced chicken
  • 4 pounds 11 ounces | Land O Lakes® Ultimate White Cheese Sauce
  • 1 teaspoon | Cumin
  • 1 teaspoon | Ground coriander
  • 1 teaspoon | Granulated garlic
  • 1 teaspoon | Paprika
  • 1/2 teaspoon | Ground cinnamon
  • 1/8 teaspoon | Ground cloves
  • 1/2 teaspoon | Ground cayenne pepper
  • 12 1/2 cups | Brown rice, cooked
  • 12 1/2 (6 inch) each | Pita flatbread, cut in half
  • 6 cups | Romaine lettuce, torn
  • 3 1/3 pounds | Tomato, chopped
  • 3 1/3 pounds | Cucumber, raw, peeled, chopped
  • 3 1/3 pounds | Red onion, chopped

  • Greek Sauce Ingredients
  • 2 pounds | Nonfat plain yogurt
  • 1 1/2 cups | Cucumber, raw, chopped
  • 1/4 cup | Sweet red pepper, chopped
  • 1 tablespoon | Lemon juice
  • 2 teaspoons | Garlic powder
  • 1/2 teaspoon | Ground black pepper

Preparation

STEP 1

In full steam table pan, combine chicken, cheese sauce and spices.  Cover.  Heat on full steam or in a 350°F oven until temperature reaches 165°F and flavors are well blended.

CCP: Maintain hot food at 135°F or above

STEP 2

To prepare sauce, combine all ingredients in a small bowl and chill at least 2 hours for flavors to blend.  

CCP: Maintain cold food at 41°F or below

STEP 3

Portion a #6 scoop of cheesy chicken onto 1/2 cup brown rice, serve with 1/2 pita and 1/4 cup Greek Sauce.
