Preparation
STEP 1
Combine barbecue sauce and pork in saucepan; cook until mixture is heated to 165˚F for 15 seconds. Keep warm.
CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above
STEP 2
Spray two full hotel pans with release spray or line with parchment paper.
STEP 3
Place bottom halves of buns in prepared pans (24 per pan). Top each with 1 Cracker Cut.
STEP 4
Divide pork mixture evenly among buns; top each with 1 more Cracker Cut, centered over bun. Cover with top halves of buns.
STEP 5
Cover with parchment paper and tightly seal pans with foil.
STEP 6
Bake sandwiches at 350°F until cheese is melted and sandwich is heated to 165°F for 15 seconds.
