Cheesy Cowboy Caviar

Yield: 70 servings | Serving Size: 1/2 cup
Child Nutrition: 1/2 meat/meat alternate, 1/8 cup vegetable (other), 1/4 cup vegetable (legumes) | HACCP Process III.

Ingredients

  • 1 pound | Onion, chopped
  • 2 pounds | Frozen corn, thawed
  • 5 ounces | Fresh jalapeños, *chopped
  • 6 ounces | Fresh tomatoes, chopped
*Do not substitute canned jalapeños as they are too acidic and will cause sauce to curdle.

Preparation

STEP 1

In large bowl, add chipotle seasoning base to Ultimate White Cheese Sauce.  Stir to combine flavors.  Set aside.

STEP 2

In large stock pot or kettle, combine the canned beans, onions, corn, peppers and tomatoes.

STEP 3

Stir in chipotle sauce and combine with vegetable mixture.

STEP 4

Heat over medium heat until hot and heated through.

CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 135°F or above
