Heat oven to 375°F. Spray half hotel pan with release spray.
Combine 8 ounces Extra Melt Shredded American Cheese, cornmeal, corn, flour, sugar, salt, baking powder and baking soda in large bowl; mix well. Combine buttermilk, melted butter and eggs in another bowl; mix well. Add wet ingredients to dry; stir until just combined.
Spread batter evenly into prepared pan. Bake 30-35 minutes or until toothpick inserted into center comes out clean. Remove from oven. Sprinkle evenly with 3 ounces cheese. Bake 5 minutes longer.
Cut into 12 portions to serve.
Double all ingredients and bake in a full hotel pan.
