STEP 1
Hot Preparation:
Prepare fries. Hold warm.
Prepare chili. Hold warm.
Heat Ultimate Cheddar Cheese Sauce using desired method to 165°F for 15 seconds. Hold warm in pouch until ready to portion.
When ready to portion, place into desired container*:
2.3 ounces fries
3 ounces (#12 scoop) Turkey Chili with Beans
3 ounces (#12 scoop) Ultimate Cheddar Cheese Sauce
*If possible, keep ingredients separate so fries do not get soggy.
CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above
STEP 2
Cold Preparation:
Prepare fries. Chill immediately.
Prepare chili. Chill immediately.
Scoop Ultimate Cheddar Cheese Sauce directly from pouch from shelf-stable storage.
When ready to portion, place into desired container*:
2.3 ounces fries
3 ounces (#12 scoop) Turkey Chili with Beans
3 ounces (#12 scoop) Ultimate Cheddar Cheese Sauce
Place in microwave-safe container. Cover and refrigerate immediately.
Serve or consume within three days of preparation.
*Keep ingredients separate so fries do not get soggy.
CCP: Maintain cold food at 41°F or below

Tip #1
Include instructions on how to heat at home: In microwave-safe container, top French fries with chili and cheese. Microwave, loosley covered, in 30-second intervals until mixture reaches 165°F. Send home with a grain such as a whole grain roll to make this a reimbursable meal.
