Cheese Soup with Golden Velvet Cheese Spread, Corn and Chicken

Ingredients

  • 6 (6 inch) inch | Corn tortillas, cut into 1/4-inch strips
  • 2 tablespoons | Land O Lakes® Butter
  • 8 ounces | Onion, chopped
  • 3 teaspoons | Garlic, chopped
  • 8 ounces | Red bell pepper, chopped
  • 2 teaspoons | Low-sodium chicken base
  • 2 cups | 2% milk

Preparation

STEP 1

To prepare topping, deep fry tortilla strips, set aside.

STEP 2

To prepare chowder, melt butter in heavy saucepan. Add onions, garlic and peppers, sauté until tender. Whisk in chicken base, milk, mustard, coriander and cumin. Bring to a boil. Stir in Golden Velvet Cheese until melted. Add chicken breast and corn, continue cooking until heated through to 165°F.

STEP 3

Garnish with tortillas strips to serve.
