To prepare topping, deep fry tortilla strips, set aside.
To prepare chowder, melt butter in heavy saucepan. Add onions, garlic and peppers, sauté until tender. Whisk in chicken base, milk, mustard, coriander and cumin. Bring to a boil. Stir in Golden Velvet Cheese until melted. Add chicken breast and corn, continue cooking until heated through to 165°F.
Garnish with tortillas strips to serve.
