Caribbean-Inspired Pork Bowl with Extra Melt® Shredded American Cheese

Ingredients

  • 4 pounds | Lean pork loin, cubed
  • 2 tablespoons | Jerk seasoning
  • 1 1/2 teaspoons | Pepper
  • 1 1/2 ounces (3 tablespoons) | Vegetable oil
  • 14 cups | Spanish rice (recipe below)
  • 24 ounces (6 cups) | Land O Lakes® Extra Melt® Shredded American Cheese

  • 1 1/2 ounces (3 tablespoons) | Vegetable oil
  • 6 ounces (1 cup) | Onion, chopped
  • 6 ounces (1 1/2 cups) | Green bell peppers, chopped
  • 8 ounces (2 cups) | Celery, chopped
  • 2 tablespoons | Chili powder
  • 4 1/2 teaspoons | Ground cumin
  • 1 1/2 teaspoons | Paprika
  • 1 1/2 teaspoons | Onion powder
  • 1 teaspoon | Pepper
  • 29 ounces | Long grain white rice, uncoooked
  • 60 ounces (7 1/2 cups) | Water
  • 1 (6-ounce) can | Tomato paste
  • 16 ounces | Canned diced tomatoes
  • Optional Garnish | Pickled red onion, mango, radish, jalapeños, cilantro, lime

Preparation

STEP 1

Combine pork, Jerk seasoning and 1 1/2 teaspoons pepper in large bowl; toss to coat.

STEP 2

Heat 1 1/2 ounces oil in kettle or large skillet. Add seasoned pork; sauté until cooked through.

STEP 3

Heat 1 1/2 ounces oil in stockpot. Add onion, green peppers and celery; cook until softened. Stir in rice and spices until rice is well coated. Sauté 1 minute. Add water and tomato paste; stir until well combined. Bring to a simmer; cover. Simmer 18-20 minutes or until rice is tender and water is absorbed. Stir in diced tomatoes. Heat until mixture reaches 165°F.

STEP 4

Scoop 4 ounces heated Spanish rice into bowl to serve. Top with 1 1/2 ounces pork and 1 ounce Extra Melt® Shredded America Cheese.

STEP 5

Bake in 375°F oven 10-15 minutes or until cheese is melted and casserole is heated through and internal temperature reaches 165°F.

STEP 6

Garnish with pickled red onion, mango, radish, jalapeños, cilantro and lime, if desired.
