Bruschetta Pasta Rosa with Ultimate Creamy White™ Cheese Sauce

Ingredients

  • 50 ounces (1 1/2 quarts) | Low-sodium marinara sauce
  • 64 ounces (2 quarts) | Skim milk
  • 84 ounces (3 quarts) | Prepared bruschetta topping

Preparation

STEP 1

Cook pasta to al dente according to manufacturer's instruction; drain. Divide evenly among 4 deep steam table pans (about 8 pounds per pan). Hold warm until service.

STEP 2

Meanwhile, combine chicken, Ultimate Creamy White™ Cheese Sauce, marinara sauce and milk in separate hotel pan. Cover.

STEP 3

Heat cheese sauce mixture on full steam 30 minutes or until mixture reaches 165°F and is heated through.

CCP: Heat to 165°F for at least 15 seconds

STEP 4

Divide heated chicken and cheese mixture evenly over warm noodles. Toss gently to coat.

STEP 5

Cover steam table pans; return to steamer 5-10 minutes or until pasta and chicken mixture reaches 165°F.

CCP: Heat to 165°F for at least 15 seconds

STEP 6

Top each pan of pasta mixture with 3 cups bruschetta topping. Cover. 

STEP 7

Hold warm until service.

CCP: Maintain hot food at 140°F or above
