Breakfast Pizza with Ultimate White Cheese Sauce

Yield: 7 9-inch pizzas | Serving Size: 28 portions
Child Nutrition: 2 meat/meat alternate, 2 oz. eq. grain, 1/8 cup vegetable (other) | HACCP Process III.

Ingredients

  • 42 ounces (5 1/2 cups) | Liquid egg product, scrambled, cooked
  • 3 1/2 cups | Hash brown potatoes, cooked to golden
  • 1 cup | Turkey bacon, cooked, diced
  • 1/2 cup | Red bell pepper, diced
  • 1/2 cup | Green onions, sliced

Preparation

STEP 1

Combine all Queso ingredients; cover. Heat on full steam until sauce reaches 165°F for 15 seconds. Hold warm.

CCP: Heat to 165°F for at least 15 seconds

STEP 2

Par-bake pizza crust 3-5 minutes in preheated conventional oven at 375°F.

STEP 3

Mix half of cheese shreds with queso.

STEP 4

Top each pizza crust with:
1/3 cup queso and cheese shred mixture, leaving 1/2 inch on edge
3/4 cup cooked eggs
1/2 cup hash browns
2 tablespoons bacon
1 tablespoon red bell pepper
2 tablespoons Cheddar shreds

STEP 5

Bake pizza 20-25 minutes or until cheese is melted and crust is browned and crispy.

STEP 6

Top cooked pizza with green onions.  Slice each pizza into quarters and serve.

CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above
