Preparation
STEP 1
Cook pasta to al dente according to manufacturer's instruction; drain. Divide evenly among four deep steam table pans (about 8 pounds per pan). Hold warm until service.
CCP: Maintain hot food at 140°F or above
STEP 2
Heat pork according to manufacturer's instruction to 165°F. Hold warm until service.
CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above
STEP 3
Combine Ultimate White Cheese Sauce, milk and Cheddar cheese in separate full steam table pan.
STEP 4
Cover and heat cheese sauce mixture on full steam for 30 minutes or until mixture reaches 165°F and is heated through.
CCP: Heat to 165°F for at least 15 seconds
STEP 5
Divide heated cheese mixture evenly over warm noodles (about 6 pounds per pan). Toss gently to mix.
STEP 6
For each pan, portion 33 ounces shredded pork evenly over cheesy pasta. Portion 3/4 cup barbecue sauce evenly over pork and pasta mixtures.
STEP 7
Cover steam table pans;or return to steamer 5-10 minutes until pasta and pork mixture reaches 165°F.
CCP: Heat to 165°F for at least 15 seconds
STEP 8
Hold warm until serving.
