Barbecue Chicken Fries recipe


  • 14 pounds | Prepared French fries
  • 77 ounces (7 3/4 cups) | Barbecue sauce*



Hold French fries warm until service.


Combine barbecue sauce and chicken in hotel pan. Cover. Heat until temperature reaches 165°F for 15 seconds.

CCP: Heat to 165°F for at least 15 seconds


Heat in 350°F oven 50-60 minutes or until internal temperature reaches 165°F. Hold hot until service.

CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above


For each serving, top 3/4 cup fries with 3 ounces BBQ chicken and about 1/2 ounce shredded cheese.
