Preparation
STEP 1
Combine Ultimate White Cheese Sauce and granulated garlic in large bowl. Refrigerate immediately.
CCP: Maintain cold food at 41°F or below
STEP 2
When ready to assemble, combine diced vegetables in separate large bowl; set aside.
STEP 3
Lay tortillas flat; spread 1.5 ounces (#24 scoop) chilled cheese sauce onto each.
STEP 4
Using #8 scool (1/2 cup), protion diced vegetables over cold cheese sauce.
CCP: Maintain cold food at 41°F or below
STEP 5
Top with 2 tablespoons shredded lettuce and 1.5 ounces mozzarella cheese.
STEP 6
Roll burrito-style or as a roll-up. Wrap in deli foil; refrigerate immediately. Best consumed day of assembly. Can hold refrigerated up to 2 days.

Recipe Tips
Tip #1
Adjust vegetables according to student preferences and/or inventory; maintain 1/2 cup assorted vegetables per wrap. Vegetables are diced for ease of portioning, but sliced vegetables are also a good option for this wrap. This is a great way to use DOD veggies.

Type of wrap used may affect longevity of refrigerated hold. Best consumed day of assembly.

Serve with 1/2 cup fruit.
