Alfredo Sauce with Tomatoes and Bacon

Ingredients

  • 2 pounds | Bacon, cut into 1/2-inch pieces
  • 1 (#10) can | Canned tomatoes, undrained, chopped
  • 2 tablespoons | Salt
  • To taste | Freshly ground pepper
  • 1/4 cup | Vodka

Preparation

STEP 1

In large skillet cook bacon until crisp; drain. Stir in tomatoes, salt and pepper. Cook until heated through. Stir in vodka before serving. Refrigerate or hold hot until serving time.

STEP 2

For each serving toss 6 ounces hot pasta with 1/4 cup hot Alfredo sauce and 1/4 cup hot tomato sauce. Garnish with 2 tablespoons Parmesan cheese and chopped fresh tarragon leaves, if desired.
