Prepare rice according to manufacturer directions; do not add salt. Set aside.
While rice is cooking, spray non-stick cooking spray in large saucepan over medium heat; add carrots, celery and onions, heat until soft. Add mushrooms; stir to combine.
Stir in remaining ingredients. Cook over low heat until heated through. Heat to165°F for 15 seconds. Add more pepper to taste, if desired.
