Sunny Broccoli Salad with Ultimate White Cheese Sauce

Yield: 35 servings | Serving Size: 8 ounces [two #6 scoops]

Ingredients

  • 44 ounces (13 cups) | Matchstick carrots
  • 28 ounces (6 1/2 cups) | Sweetened dried cranberries
  • 17 1/2 ounces (3 1/3 cups) | Red onions, finely diced

Preparation

STEP 1

Whisk together Ultimate White Cheese Sauce, honey and vinegar in large bowl.

STEP 2

Add all remaining ingredients; stir until well combined. Cover bowl; refrigerate immediately until ready to portion.

CCP: Maintain cold food at 41°F or below

STEP 3

Just prior to service, stir well to recoat salad with sauce.

STEP 4

To serve, portion two #6 scoops into desired serving container. Best if consumed within 24 hours of preparation. Can be held up to three days. Stir well before portioning.
