Sliced Beef Sandwich with Italian Blend Cheese Product and Summer Vegetables

Ingredients

  • 1 ounce | Land O Lakes® Butter
  • 2 1/2 ounces | Onions, chopped
  • 2 teaspoons | Garlic, chopped
  • 5 ounces | Red, green and yellow peppers, 1/2-inch dice
  • 8 ounces | Eggplant, unpeeled, 1/2-inch dice
  • 4 ounces | Zucchini, 1/2-inch dice
  • 1/2 teaspoon | Kosher salt
  • 1/4 teaspoon | Pepper
  • 16 ounces | Tomatoes, Canned diced, undrained
  • 8 each | Hoagie bun , split, toasted
  • 24 ounces | Deli Italian roast beef, sliced
  • 16 slices ( 1-ounce) | Land O Lakes® Italian Blend Cheese Product

Preparation

STEP 1

Heat butter in sauté pan over medium-high heat. Sauté onions and bell peppers for 1 to 2 minutes. Add garlic, eggplant, zucchini, salt and pepper. Cook 3 to 4 minutes, until vegetables are crisp-tender.

STEP 2

Add tomatoes; cook until mixture has thickened. Set aside.

STEP 3

To assemble sandwiches, layer bottom half of hoagie bun with 3 ounces roast beef and 2 slices Italian Blend cheese. Place under broiler until cheese is melted. Top with 3 ounces ratatouille and top half of bun.
