Homestyle Mac and Cheese with Broccoli

Yield: 26 servings | Serving Size: 7.7 ounces
Child Nutrition: 2.25 meat/meat alternate, 1.5 oz. eq. grain ,1/8 cup vegetable (dark green) | HACCP Process III.

Ingredients

  • 5 tablespoons | Parmesan cheese, grated
  • 2 cups | Panko breadcrumbs
  • 1 teaspoon | Paprika

Preparation

STEP 1

Spray full steam table pan with nonstick spray.

STEP 2

Place broccoli pieces into prepared pan.

STEP 3

Cover broccoli with thawed Macaroni and Cheese.  Top with shredded cheese.

STEP 4

Combine Parmesan, breadcrumbs and paprika then sprinkle breadcrumb mixture over shredded cheddar.  Cover.

STEP 5

Bake at 350°F for 45 minutes.  Remove cover.  Bake an additional 15 minutes or until the mixture reaches 165°F for 15 seconds and the topping is golden.

CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above
