Creamy Chicken Chowder

Ingredients

  • 2 tablespoons | Vegetable oil
  • 14 ounces | Onion, chopped
  • 3 tablespoons | Fresh garlic, chopped
  • 12 ounces | Mushrooms, minced
  • 12 ounces | Cooked chicken, diced

Preparation

STEP 1

In large heavy sauce pan heat oil over medium heat.

STEP 2

Sauté onion, garlic and mushrooms until beginning to soften.

STEP 3

Add chicken, Ultimate White Cheese Sauce, red peppers, beans and chicken broth. Cover and simmer over low heat for 15 minutes until heated through. Heat to 165°F for 15 seconds.

STEP 4

Add spinach, cover and simmer for an additional 5 minutes. 

CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 135°F or above
