In large heavy sauce pan heat oil over medium heat.
Sauté onion, garlic and mushrooms until beginning to soften.
Add chicken, Ultimate White Cheese Sauce, red peppers, beans and chicken broth. Cover and simmer over low heat for 15 minutes until heated through. Heat to 165°F for 15 seconds.
Add spinach, cover and simmer for an additional 5 minutes.
CCP: Heat to 165°F for at least 15 seconds
